Boulder Corn Muffins

Ingredients

2 cups Silk Plain Soymilk
1/4 cup oil
3-4 Tbsp. honey or sugar
1 Tbsp. baking powder
1 tsp. salt
1 1/4 cup flour
1 1/2 cup cornmeal
3 Tbsp. cornstarch
1 can corn (optional)

Instructions

Preheat your oven to 400ºF. Mix the dry ingredients together in a large mixing bowl. Then pour oil, Silk® and canned corn into the mixture. Mix the liquid ingredients until there are no chunks left in the mixture. Pour into a muffin pan filling each muffin slot ¾ full. Bake for 20-25 minutes.
