Cold Avocado Soup with White Corn Salsa
Ingredients
Avocado Soup2 ripe Hass avocados, about 1 pound
1/4 cup chopped green onions
1 & 1/2 cups Silk Unsweetened Soymilk
1/4 cup Silk Soy Creamer
1/2 cup ice water
1/4 cup fresh lime juice
1 teaspoon salt
Freshly ground black pepper to taste
Pinch of cayenne pepper, optional
White Corn Salsa
1 small red onion, diced
2 ears white corn, kernels cut off the cob
1 large tomato, diced
4 tablespoons minced green onion
1 tablespoon fresh lime juice
2 tablespoons chopped fresh cilantro
1 small jalapeño, minced
1/4 teaspoon salt
For the Salsa-- mix all ingredients together in a small bowl. Serve as garnish for the soup or with tortilla chips as an appetizer.
Instructions
Cut open the avocados, and scoop out flesh. In a blender puree the avocado, green onion, soymilk, soy creamer, ice water, lime juice and salt. Season to taste with freshly ground black pepper and/or cayenne pepper. Thin with additional soymilk if desired. Serve garnished with the White Corn Salsa.Nutrition Information
